It really looks like the filling has spices in it from the photos. Cinnamon? Did I miss this in the recipe?

Thanks so much, Sarah. They do come together quickly and deliver on flavor and texture. I swung by an orchard for a giant bag of “utility” apples today. While most will be eaten raw with peanut butter, I see more pie in my future.

Love them! Sometimes I’ve scored a bag of Calville ground falls at Poverty Lane. Incredible deal and they keep forever. 🙏🏼🙏🏼🙏🏼

Beautiful, just beautiful!! Will make with our terrace apples in Switzerland while seeing the « North Country » in its painted glory and smell the wood fires and fallen leaves of my youth!!
