This is such a beautiful post - I love your thoughts about purpose and can identify with the sense of flow you get with baking (baking is one of the few things that helps me be present) - and of course the giant pretzels look amazing! I’m a little intimidated by the prospect of handling them, as I’m completely uncoordinated, but I’ll try and work up the courage - or I might try this recipe in pretzel bun form first!

Are the pretzels in the photos dipped in lye, or in baking soda? In my experience, that deep color only comes from lye, but I wonder if boiling the baking soda water makes a this kind of difference.

Hey Nick, all the details are above but yes, I’m boiling them as most folks (other than me, lol) don’t have lye. My recipe has soda in the boil, the high pH supports good Maillard and lots of color. I also link to a roll version with lye instructions. 👍🏻
